Best drunk in the 18 months after bottling, the wine is a perfect with meats, fish entries, tapas.
Grape varieties : This rosé wine is composed of Syrah.
Terroir : In the western area of the Languedoc vineyards but away from the Mediterranean influence. The vines are planted on the rounded hilltops of the Malepère region at the foot of the old walled city of Carcassonne. The soil is deep, and the Atlantic climate allows for good acidity in these white wines.
Vineyard : Pruning method: Cordon de Royat on wire; the vines are mechanically harvested.
Yield: 70 hl/ha
Wine-making : Mechanical grape-picking based on strict soil selection, taking into account the maturity of each vineyard. The grapes are completely de-stalked before fermentation, which takes place in stainless steel vats, with very special attention being paid to fermentation temperatures and pumping over operations, so as to obtain subtle tannins and a good fruity taste.
Tasting: Aromatic and fruity, with aromas of red berries and fresh-quenching.
