|Winemaking||Mechanical and manual harvest with strict terroir selection, taking into account the maturity of each plot. The grapes are entirely destalked before fermentation. The fermentation is carried out in stainless steel vats, with special care given to fermentation temperatures and to pump-overs, to obtain delicate tannins and good fruit.|
