Perfect as an aperitif, well chilled, it is ideal with fish and seafood, as well as white meat and pasta with cream. It can also be drunk by itself with a good book or with friends.
|Winemaking||The grapes are machine and hand harvested following a strict selection of terroir and taking into account the ripeness of each plot. Destemming is followed by a short-lived steeping of the skins, and then clarification of the juices at low temperature (7°C). Fermentation proceeds with constant control of temperatures. Low-level yeasting may be applied at the start of fermentation to encourage a better development of aromas. Part of the juice is vinified using French oak staves in order to encourage spicy, grilled aromas.|
|Tasting Notes||A fine golden colour. Pleasant nose of exotic fruit and gingerbread. Full, lively and complex in the mouth. Hints of pineapple, grapefruit, fennel and liquorice. Ideal as an aperitif, well chilled, this wine will also accompany fish, or white meat and pasta in cream. Can also be enjoyed on its own with a good book or in the company of friends. To drink preferably in the early years following its bottling, but evolves nicely over the course of 2-3 years. Serving temperature: 10-12°C|
