Winemaking | In stainless steel tank with controlled temperature, fermentations begin at 28° C and fall down until 25°C during 10 days. Some cuvées are vinified in flash detente. This operation consists in putting refrigerated berries in vacuum-packed in a tank so that fruits cells burst before fermentation. It permits an optimum extraction of polyphenol and aromas. |
