This product can be enjoyed as an aperitif; it is perfect for fish, shellfish and grilled fish. Its balance and its aromas marry well with green asparagus.

Grape-variety 100% Sauvignon white
Soil limestone clay 
Winemaking The mechanical harvest takes place at night in order to get the grapes to the cellar when they are still fresh. The destemmed grapes are macerated on the skins for a short period under inert gas. The clarifying of the juice takes place in stalls at low temperature (5 to 7°C).
After yeasting with selected yeasts, the fermentation in steel vats, at controlled temperature is followed by regular checking of density and temperature. This is in order to optimise the development of fermentative and varietal aromas.
