Marion Fontanel and her partner Mickaël are the producers of the Domaine Les Fennals.
The Château Les Fennals was at first an outbuilding of the Lagrasse abbey before being the property of Aragon family and then the Fontanel family who have owned it now for three generations.
|Grape-varieties||Carignan, Grenache et Syrah|
|Winemaking||The winery houses small stainless steel tanks, all of them fitted with temperature control equipment so that each vineyard and grape variety can be fermented separately. The grapes are harvested by hand and the crop enters the winery with no added sulphur. Vatting lasts for between 15 to 21 days using rack and return twice and fairly high temperatures (26°C). The wines are racked and blended on fruit days.|
|Tasting Note||To the eye this wine is ruby red with shiny tones and a deep colour. On the nose the power of the red fruit is underlined by the presence of spices. And finally on the palate this wine is ample, round and possesses a fresh attack. It is recommended to drink this wine between 16 and 18°C with feathered wild fowl from the lakes (moorhens, ducks) roasts or stews.|
