Makes the perfect aperitif served well-chilled and is also ideal for fish and seafood, as well as meat in a white sauce and pasta with a creamy sauce.
Varietal range: Chardonnay
Soil types: The vineyard in the western Aude borders the Limoux valley. The vineyard was completely renovated some twenty old years ago. The principal grape varieties are now Merlot, Syrah, Sauvignon and Chardonnay.
Vineyard management: The vines are trained using the Cordon de Royat method and harvested by machine.
Yield: 70 hl / ha
Winemaking: The grapes go direct to press in a pneumatic press. The juice is racked at low temperatures then the clarified juice is fermented slowly for two weeks. A small amount of yeast may be added at the start of fermentation to maximise the development of aroma.
Tasting notes: Beautiful vibrant yellow. Very alluring nose of white-fleshed fruits, nuts and honey.
Drink preferably over the first few years after bottling. Matures well for 3-4 years.
