We wanted to take our rewarding experience with organic wines a stage further and respond to demand from some of our clients whilst keeping quality our number one priority. This is all about trust and techniques. The protocol must be fully understood and implemented efficiently, and the challenges must be taken on board to produce wines with no added sulphur that do not oxidise within the first two years after bottling.
|Soil||The soils are sand-dominant.|
|Winemaking||After the grapes are picked by machine at night, they are destemmed and then undergo cold pre-fermentation soaking. Yeast inoculation promotes rapid fermentation at 23°C. Juice is extracted through 2 to 4 rack-and-returns followed by short post-fermentation soaking lasting 2 to 3 days, then ageing in stainless steel tanks. The wines are bottled rapidly after the winemaking process and transferred under a blanket of inert gas, in an oxygen-free environment. The wine offers up varietal aromas of fresh fruits.|
|Tasting Note||The 365 Merlot label is a compelling, subtle, full-bodied wine on the palate. Drink at 16°C straight after opening to fully discover its fresh, fruity aromatics.|
