Works well with dried fruit and vegetables or served with tropical fruits.
|Soil||The selected vineyards are on pebble-strewn soils which radiate heat back by night, yielding beautifully ripe and very concentrated wines.|
|Winemaking||Harvesting by machine and by hand based on strict site selection taking into account the ripeness of each plot. The fruit is destemmed and undergoes short skin contact maceration. The juice is clarified at low temperatures (7°C). Regular temperature control throughout fermentation. A little yeast can be added at the start of fermentation to maximise development of aroma. Putting the lees back into suspension at the end of fermentation adds fat and finesse to the wine.|
