Winemaking | Machine-harvested with rigorous selection of the plots, depending upon terroir and relative ripeness. Bunches are completely destemmed prior to vatting. Fermentation takes place in re-lined concrete vats, with particular attention paid to fermentation temperatures and pump-overs in order to obtain fine tanins and lots of fruitiness. |
Tasting Note | Garnet-coloured with purplish highlights. Nose of fresh red fruits (cherry, strawberry), black fruit (blackberry) and spices, with a subtle vegetal thread typical of this grape-variety. Pleasant on the palate with delicate tanins. A wine to be appreciated alongside smoked charcuteries, grilled and roast meats, gratinated vegetables, and mild cheese. To be enjoyed preferably in the first years following the bottling; evolves agreeably for 3-4 years. Serving temperature: 16°C |
