Grape-varieties 90% Syrah, 10% Grenache
Soil clay-limestone soil
Winemaking Entirely mechanised nocturnal harvest. The grapes are protected with carbonic ice as soon as they reach the harvest trailer-containers. They are then steeped anaerobically in the presses at low temperature for 2-4 hours. The juices are then decanted cold and racked off prior to fermentation. Light yeasting is followed by low-temperature fermentation at 14-16°C for a better development of aromas. Final blending with a touch of Grenache is carried out just before the springtime bottling of this Syrah-la-Chapelle rosé.
Tasting Notes A brilliant rosé colour with flashes of violet. A lingering fruit-drop nose, long in the mouth. Hints of fruit compote and crushed red fruit. Fresh and aromatic on the palate. The perfect accompaniment to light, modern, cheerful cuisine. To be enjoyed young: within 18 months of the bottling. Serving temperature: 10-12°C
