 The Chardonnay la Chapelle is to be served as an aperitive, well chilled, or as the perfect accompaniment to fish and shell-fish, as well as white meat with pasta in a cream sauce.

Grape-variety 100% Chardonnay
Geography Vineyards situated in two different zones: Costières de Nîmes, a hot, pebbly terroir; and the high terraces of the Minervois
Winemaking An entirely mechanised nocturnal harvest. Entirely destemmed before pressing. Settling of the juices at low temperature (7°C). Constant temperature control of the fermentation process. Light yeasting may be carried out at the start of fermentation to encourage better development of aromas.
Tasting Notes A dazzling yellow appearance. A pleasant nose of exotic fruit and spices. A generous first impression on the palate with aromas of pineapple, white peach and gingerbread, and good length. The Chardonnay la Chapelle is to be served as an aperitive, well chilled, or as the perfect accompaniment to fish and shell-fish, as well as white meat with pasta in a cream sauce. To be enjoyed preferably within two years of the bottling. Serving temperature: 10-12°C.
