With this collection Claude Vialade has sought to offer you wines which are far from the usual Mediterranean style. Family Selection belongs to a global category of wines distinguished by their characteristic freshness.
|Geography||This Pinot comes from the upper valley of the Aude. Vineyard situated on the Limoux terroir at the westernmost region of the Languedoc-Roussillon in the foothills of the Pyrenees near the watershed axis.|
|Winemaking||Machine-harvested in the mornings. The harvest is destemmed, crushed and introduced into the vats. Fermentation with selected yeasts takes place in stainless steel vats, with particular attention being paid to temperature-control. Pump-overs, délestages (pump-overs of racked- off juices) and duration of maceration are adjusted after tasting trials so as to obtain fine tannins. Part of the wine is then run off into barrels, where malolactic fermentation will proceed.|
|Tasting Notes||This product belongs to the “cool climate style” category of wines. It has a pure and gleaming red colour. Its powerful aromas of soft fruit, blackcurrant and cherry complement a harmonious balance of freshness and ripeness in the mouth, all contained within an elegantly firm structure. Goes well with cured meats, roasted or grilled meat, as also with cheeses, especially those from the mountains (tommes). Serving temperature: 16°C|
