Winemaking The grapes are entirely picked by machine by night. Before vatting, they are destemmed. Fermentation lasts for 25 to 30 days at controlled temperatures of around 26°C at the outset, dropping to 22°C at the end of fermentation. Pumping over is conducted regularly and frequently to fully bring out varietal potential. Native yeast is used for fermentation, the wines are not fined and the amount of SO2 is limited. None of the inputs are animal-derived or tested on animals.
Tasting Note The wine combines the finesse of the Grenache with the body of the Cabernet. Showing refined fruit and spice on the nose, its ripe, soft tannins create a harmonious, full palate.
