Châteaux & Domaines AOP du Languedoc Roussillon

Château Mauléon
AOP Côtes du Roussillon Villages Caramany
This is certainly one of the oldest estates in one of the oldest appellations, its status being granted in 1977.
Grape Varieties | 45% Syrah + 40% Carignan + 15% Grenache |
Geography | The Roussillon vineyards, contiguous with the Spanish border, have the greatest number of hours of sunshine anywhere in France. Situated at the heart of the Agly valley, between the Conflent valley and the Fénouillèdes mountain range, Caramany lies at c. 250 meters above sea-level. |
Winemaking | Manual harvest in October (which is late for the Roussillon). The Carignan and half of the Syrah are vinified anaerobically in whole bunches (macération carbonique) for two weeks at 28-32°C. The other half of the Syrah and the Grenache are destemmed and vinified in traditional fashion, remaining in the vats for 18 days. |
Tasting Note | A spicy wine with the fragrance of violets, velvety smooth, with red fruits and mellow tannins. To accompany cured mountain ham, especially the Patta Negre from Extremadura in Spain….also a crown of lamb in spices, or pork chops with herbes de Provence, stuffed tomatoes, mushrooms in cream sauce… |
